Why are spinach leaves ground in the presence of a special pH-buffered sugar solution? Why not distilled water?
The water is a hypotonic solution to the cells so would cause the cell contents to change. Cells in freshwater or distilled water swell unless they have evolved mechanisms to handle the condition..
